I find 3 warlocks pally and priest a extreemly effective PvE team, Good AoE good singetarget loads of dps, low downtime with Life tap etc and good heals :)
Multiclass teams do really good aswell if you tune the Click maceos good, I personally like Mage+Lock+Priest+paladin+Druid or maby a shaman hunters are nice too.. anything goes really, im about to make a melee team of Rogue Warrior Enhance shaman a priest healer(i love priests so awsome) and a tank dunno yet.. will be fun to see
i use paladin(tank), shaman, druid, mage, priest(heals)
i like the benefit from all classes.
Love the mage food/ports and high dps. Used often, very handy.
Love the shaman burst and buff, elementals and Bloodlust
The druid i could replace, but he brings good buffs, battle rez and good aoe dps.
if anything, i would change the druid with a lock or another mage maybe, but very happy as is.
I have the same setup as Zub and did indeed swap out my druid with a warlock. I'm very happy with the change. The lock can run as destruction for replenishment (if my mage isn't frost), or demonology for the spellpower buff.
The only thing lost was the imp faerie fire debuff as the curse of elements covers the 13% magic debuff (which is huge with an all caster team)
EDIT: all my macros are /click macros. they seem to be more efficient than straight castsequeneces...

my mage is frost right now and while his dps isn't insane like an arcane mage, it is respectable and gives replenishment. he has aggro problems believe it or not. his macro uses icy veins and coldsnap whenever they are off cooldown and then spams frostbolt..
the elemental shaman macros are plastered all over this forum or check the wiki. should be easy to find.
that covers the 3 dps or there are some shadow priest macros in the wiki too or some from a week or two ago check I believe "mercuro's macro's" thread
it's like a CD timer based on how fast you physically hit a button, see the movie that Fenril made in the movies section.
Honestly I feel that Paladin tank, 3xspriest, + healer is the most efficient. Why? The innate healing from spriests makes them nigh unkillable unless its a one shot deal. So AoEs arent such a big deal. Also they all have the ability to survive a massive one time aoe with very little damage taken. Now the only problem comes in when Cata launches and how easy/hard they will be to effectively macro their dps rotation. We will see.
For what it's worth, my first group was also Pally (tank), Lock, Mage, Druid, Priest (heals) The buffs were good and didn't miss heroism. While typing this I realize that my teams are in in my sig. All have worked out great. Some mob AoE abilities hurt the melee team but they're fun.
I really enjoy my pally tank - 3x unholy dk - disc priest. It gives me so much survivability, cc options and toys to play with, that I regret it I didn't start to play them earlier.
I have a mixed grp right now:
Prot War/ Resto Druid/ Shadow Priest/ Arcane Mage/ Destro Lock. It works really well.
Ports / Water Max Buffs... Good aoe... OP heals...
For PvE:
Prot Paladin.
Warlock.
3x Elemental Shaman.
I have
Prot Pally
Arcane Mage
Ele Shaman
Destro Warlock
Disc Priest
Works great and I usually don't stop to drink unless I pull 3+ groups at once, then it's the mage that has to drink.
Also have a boomkin that might replace the shaman someday.
Mixed caster teams are great for the buffs, but Mixed melee teams just mow down everything with little to no downtime.
