gathering professions as you go
crafting for your brain as you go - my pally is an engineer so had the tankatronic goggles asap
crafting for the alts when u get the chance, for example my 3 clothies have no professions at the moment even though they're 70 and won't until I have enough gold (via dailies) to have a "powerlevel professions day" they'll be taking up tailoring on all, jewelcrafting on one and alchemy on another - all greens/blues created will be DE'd by my main, which works out really well once you start making the imbued sets as its a guaranteed large prismatic shard.

Here's my profession setup, and yes I am levelling them as I go:
Paladin: Skinning/Mining
Shaman1: Enchanting/Leatherworking
Shaman2: Leatherworking/Tailoring
Shaman3: Herbalism/Alchemy
Shaman4: Alchemy/Tailoring
The basic idea here is to have all the gathering professions and then 2 tailor/leather/alch within the group to maximize combine opportunities at 70.

Enchanting on all Shamans for my guys. I have mining on my lead as well.

Enchanting on all is nice for DEing quest rewards as well as adding +12 spell damage to two ring slots (enchanter's rings only). I am saving the "open" slots for Inscription in the expansion, in case it has similar, user-only benefits. I'll ditch mining if needed on my main, but it's a handy gathering skill for now.
I have two alts that have Herbalism/Alchemy-Transmute and Mining/Jewelcrafting that I use a lot. I buy mats for meta gems, transmute the raw material on one character then JC up completed meta gems on the second character. I am turning 100-130g worth of AH-bought mats into 220-250g Meta gems every day, assuming no procs on the transmute. Transmute procs are just icing on the cake. It's a nice supplementary income for almost no time invested. I plan on keeping Herbalism on the alt (even though he doesn't farm mats much) so that I can get materials for inscription easier later on. Druid+Herbalism = Love...

FWIW, I'd bank every green or blue you ever get as you level up, then just do enchanting at L70 using a combination of banked raw materials and AH-purchased stuff. It's still costly, but not as bad as doing it only on AH-bought dusts... Doing 4x Dailies will net you a ton of cash to fund the skillups you need.

It's very much worth it, I have 3 transmute masters and a potion and elixir master
I use potions SO MUCH when doing karazhan/magtheridan, it's extremely worth while for the alchemy trinket from sso alone
