I too dinged my quad shamans a week before wrath, that alone was a hard enough task.
I decided to level a single DK when Wrath went live so I could fully enjoy the content rather than worrying about multiboxing + over population + pickup quest stress. Now my DK is 75, and I feel rested enough to make a start on the shammies.
The key is to take it real easy - this is not a race. Everyone will hit the level cap eventually!

I got burned out half way through 71, lol. So I zerged Heroic SP and Mech for fun. It was nice to 'go back' so to speak. Lots of fun.

i hit level 70 just long enough to get used to doing daileys and kinda interested in an alt group (hunters).
now im halfway to 71, and have NO intrest in leveling my shammy+pally. I keep either not playing or logging in my 30something hunters or my uh, level 60 death knights. Then after an hour or so of them I feel guilty cause their not the most 'efficient' and go back to the mains for an hour or two then get bored and log off and do something else. LOL.
*shrug* got plenty of time, not gonna get server firsts or anything anyway, lol.

I only play 2 (arms war/ele sham) as a combo, but I can sympathize with the collection quest blues....
If I had a full team of 6 I'd skip questing and probably do 70-75 in Utgarde Keep and 75-78 in Violet Hold, and then quest for 78-80....
But leveling in dungeons you can get roughly the same exp per hour that you would get questing, without having to chase down / loot the 75 freaking Zul'Drak Rats.
Anyways, since you are already a walking group, take advantage of that, level in the dungeons, it'd be less stressful.

I dinged 74 on my shaman team last night and every other quest this last week seems to be a collection quest of some sort, its driving me a bit nuts and I considered just doing instances but the quests give Rep and Achievements so I would have to come back and do them anyways. I will just keep grinding on these things till I hit 80.

i love my death knight, but the massive amount of collection quests that i feel compelled to do to prevent missing out on gear has really made this expansion boring as shit to play. i have way more fun when im out of game theorycrafting.

I think I'll take the time to level some professions, I leveled all of my collection professions while rolling but I need to pick up some other professions and other things. Who knows what else I may find to hit up...

71-73 felt like a lot of work, especially since it wasn't long after launch and there were way too many people questing. I hit 76 yesterday and I've beaten the blues, probably because I can smell 80 coming closer and closer :-)
I really dislike the missing follow-option from vehicles, but other than that I'm pretty happy with the expansion so far. Some of the new mechanics are going to be a big challenge (the last boss of the old kingdom in heroic, the dragon-vehicle boss encounter), but I think most of these will be doable in one way or the other.

Whats really sad is how fast you move solo vs group. It used to be a benefit having your own group (speaking only of leveling) however there are so many people doing the same quests if you run into an elite it's a simple matter of "/say Invite?" and it's done. I level my paladin at work (hes 67 now) and my shamans only get love at home (they are 64.) He was screaming through the levels while my shaman feel like work. I'm committed this time though, I want to stay at the front of the leveling/pvp curve so I don't feel like I can't compete in arenas. I wont create a DK alt, I won't!!..... strong will leaving me.... must not..... aaaaaaaaaaahhhhh

Well.. if you play one toon, it feels faster because the collection quests or vehicle quests go at the normal pace. With a group, those type of quests just seem to take forever.
It is still faster to play a group as a team, then it is to play each member solo, one after the other. Mainly because even when there's only one drop per kill, the kill is so much faster.
I had a thread of basically the same issues. The longer you wait to level from 70 to 80, the fewer people you will compete with, and the easier that process will be.
It sucks that we'd like to be amongst the first to hit 80, to get ahead of the pvp curve and be in full set 1 gear or whatever it is called, while others are just starting to arena.
But ultimately, its a game which means it should be played for fun and be enjoyable. Any time its not fun, find a different aspect to play for fun or take a break.
You'll get to 80 when you do, and have fun when you're there. Try to make the leveling process as fun as possible, by realizing you don't have to do it in one long session.
