Symlinks don't increase speed, they just save space. Symbolic links have never worked that way in any operating system. You're disk drive cache size will affect it more since to the disk drive it's simply referencing the same data on disk which may already be in cache. You'll find an exhaustive set of performance counters that I posted about 6 months ago detailing that exact fact.
Yes, they do allow for some advantages unrelated to speed, like individual settings per WoW folder if done correctly. Outside of that I do not know of any other advantages.
I don't use it since I have one install directory for everything and received slightly better performance on my system that way.
