I'd say the latter would be easiest.
Whilest it should be possible to deal with just about any trash with 2x warlock and a priest. In later instances you might face some problems.
Whilest a prot pally, mage and priest are probably even able to do some outland instances, if enough precaution is taken and the tank/healer has decent gear. I remember stocking up on mp5 on my resto shaman, and I've met tanks, below 70, that I could heal indefinatly in some instances on most trash/bosses. If you can reach that point, it's easily 3 mannable. Just make sure your tank has a 1-2 level extra on the mobs inside the instance you do...
So like, ramparts at 62+, slavepens/ub at 65+, etc. Doing instance at a few levels earlier, complicates them to the point of probably being unable to do them at all. Whilest a few extra levels would make them seem a lot easier to tank/heal and gives you plenty of time to cc/dps.
