My recollection is that there are the following generalities:
Hunters start decent in Phase 1 but don't scale that well into the later phases.
Warlocks get pretty big buffs when they finally get "to hit" gear but that is more for raids and not that relevant for dungeons.
Warriors continue to scale up an up with gear and things like kings+might really go far with them helping Alliance Warriors overtake Horde in the last phases.
Mages get huge increases when they can go fire and leverage ignite.
I haven't really been raiding much so hopefully others can chime in and add/expand and/or correct anything I said above that may be wrong.
