I personally keep a list of the toons I want to do daily crafting cooldowns on (the MOP epics sell for quite a lot actually, so celestial cloth is a good cooldown if you have the patience to babysit the AH for enough windwool) and go through it pretty early each morning. I try not to drive myself crazy, two tailors and 5 alchemy CDs at the most (primal mana > fire is 400+g a day on my realm).
You definitely can go crazy and lose all your gaming time to things you "should" do, I think wow has that problem in general and multiboxing just multiplies it. Do what is fun, let the rest go. I don't farm mounts, for example, because I find that boring.
