2 boxing systems

About half a year ago I already got some advice on a WoW-Boxing new rig, at the time I decided not to buy but wait for Haswell-E, Haswell-E is there so are the 980s. Time for a new try. Since the last round my wife decided she didn't want my old system, she wants something new and better so she can 5-box on high settings.

This is what I planned for her:
Asus X99 Deluxe
Intel 5820K or 5930K
Samsung 850 Pro 256 GB
Corsair Vengeance 16 GB DDR4-2800 White
1 or 2 EVGA GTX 980
Corsair AX 760i
Corsair Carbide Air 540 Silver Edition

The question about this rig, will a 5820 and one 980 suffice? She has four monitor hooked up to her system (one full-HD, the other three 1600x1200).

I have since the last round upgraded my monitor setup to six monitors. Primarily want to 5 and 10 box, with good settings, streaming maybe, 15 boxing, let's just find out what the system can handle ;-)

Here's what I've planned so far:

Intel i7 5930K or 5960X
Corsair Dominator Platinum 4 x 8 Gb DDR4-2666 CL15 - or - G.SKill RipJaws 4 x 8 Gb Kit DDR4-2666 CL15
Samsung 850 Pro 256 GB
2 or 3 EVGA GTX 980
Corsair AX1200i

Question: what processor would I need, how many 980s.

Will be custom water cooling both system to get them nice and quiet with headroom to do some overclocking.
What would you change to make my plans better, please feel free to elaborate. Still not sure if I should go for the current 980s or wait for possible 980ti's or maybe 980 with more RAM.
