Mostly I've played the notes in with midi keyboard for the dynamics, and then edited the notes in sequencer, "piano roll"
Made all these songs in Fruity Loops with some decent VST plugins.

This is good stuff. I might have to steal a track or two for an upcoming video or something. ;)
