There are two things I'm not able to track while trsting rotations:
Heal;
Threat
Is there any way to do it besides going to instances or the like (like we can with dps on dummies)?
idea would be to test/optimize rotations both tanking and healing.

No, and dummies have 1 hit point so a lot of procs don't work.
You could use the gargoyles in naxx, just pull one with your tank and then use a single character too dps it down. Then when you want to quit back up closer to the portal and it will reset.
That way you will get your vampiric embrace procs and whatever else your missing off a dummy.
