If I was to setup a 10 man dual boxing setup for RAIDING using the perfect 10 man group which would involve 5 different classes does that make it a lot more difficult to do seeing as most people seem to use 1 or 2 classes for all their toons?

Well here is the general concept
If you have one class and you want them all doing the same thing then you have one setup. All the keys can do the same things so it happens across the board.
If you add in another class then you have to have two sets of keys now, one for the first class type (usually a tank) and then another set for the second type of class (Usually DPS). You will first need to do a little investigating to see how much you can combine these keys of 'when the tank does this the dps do that' sort of deal.
It keeps growing from there. In the end its just having to write compatibly timed macros across your characters for the five man set up and then work out how to run two of them at once.
Simple answer: Is it going to be harder than a group of just 1 or 2 classes, YES. But so is just a 5 man group of 5 different classes.

With 3 or more toons it is purely MULTIBOXING. ;)
Only real problem with 10-box is leveling toons to lvl 80.
Usually you can only have normal party group (max 5 ppl) for instances and quests.
Raid quests can be done with more than 5 ppl but those quests are rare and usually involve clearing raid instance.
A perfect end-game 10-man raid should have wide variety of classes for optimal buffs : 2 tanks (Prot Pala + dk/druid/war with dual spec), 2 healers (Holy Priest + shaman/druid/pala), for DPS ele sham, boomkin, mage, warlock, shadow priest and a hunter (replenishment/occasional offtank). IMO that is pretty much the best setup you can have buff-wise. Maybe replace lock or spriest for a second ele sham for more efficient usage of loots (less clothies/shaman can use more wide variety of loots) and more totems! 8)

I have a couple of 10-box teams that I've enjoyed taking into Naxx. Multiple classes take a few hours to set up, but the benefits FAR outweigh the time cost. You spend, what? a week or two of /played time leveling a team from 0-80? For another 5-8 hours investment getting everything set up you can get optimal talent specs, glyphs, and macros written for each class and then have a much better experience.

I really like a Discipline Priest.
You're still healer focused, with few/no points into Shadow.
You lose a bit of AoE healing power, but gain a lot of mitigation.
Still have the same buffs too.
This is quite possibly the strongest single target healer in the game.
Not sure if that's optimal for boxing.
You need to combine Power Word: Shield and Pain Suppression into macro's.
Heals will likely be the same, except Penance is virtually mana free and a very strong heal.
You'd need a second healer, preferably a different loot table, for raid healing.
A Resto shammy is extremely good at raid heals, but a Holy Word is exceptional when toons are bunched.
Not sure if the Resto's Chain Heal is enough in this regards, but Earth Shield is very powerful too.
