I will not be tanking - I already have a tank but I want to be able to heal the tank and DPS on the other 3, not sure wether to go druid or shamen - what are your thoughts? The tank will be a DK - Also good at leveling is a bonus :)

Shaman are the most popular for PvE (and PvP for that matter) groups because of all the stuff they bring to the table. With your "totem farm" out, you get a lot more buffs as a group than you will with 4 druids.
A few of the druids best spells use manual targeting (tree's and hurricane to name a couple). Which is very difficult to do while multiboxing. Shamans do the same thing with a single button press, magma totem or elemental totem, no need to target.

Shamans or multiple classes
I'd go shamans too. Druids are a bit more complex, youd have to macro form shifting, etc to make the most out of druids. I think that a well played druid team will do better than a shoddily played shaman team, but overall shamans are a better choice, especially if its your first time boxing. But if you are using RAF, why not level both teams to 30, then gift the other to 60, so you at least have both options.
As someone who has groups of both classes at 80, Shaman without a doubt.
At the very least your healing stream totems will provide enough passive healing for you to concentrate more on pew pew'ing the mobs.
Oh and make sure the DK spec's unholy so you get the benefit of Ebon Plague. :)
