I am not yet 60 even but I am thinking about gearing up. I see a lot of well geared PvP and PvE Shammy Teams.
For PvE gearing: How did you start? What instances are easiest and give the best Pally and Shammy gear? Which do you totally skip?
For PvP: can I gear up with 2v2 and 3v3 teams even if I just lose every game? Would I get any gear that way or Do I need to have a 5v5 and find a healer partner to suffer with me as I gear up?

if you are looking to do arena gear and you aren't 60 yet then there is a long way to go... tbh play a lot of AV and get as many honor points as you can... should be once the new season starts (june is best guess atm) you should be able to buy decent stuff with honor. Then you can use this on your 70's to gain arean points to buy the s4 gear.

I would just power on to 70, reasoning being:
1) The honour gains at 60 are a lot less than 70.
2) You are delaying the opportunity to quest instance and earn cash on the way up to 70.
3) Even in crappy gear you can do ok in AV at 70.
If you wanna collect marks, I'd recommend stopping for a few days at L69.

you are right, it wasn't my intention to imply that he stop levelling and farm AV. But it is the answer to his question :)
@OP, As Kyudo has mentioned more mileage is gained by getting to 70 first

There is a lot to be gained for both PvP and PvE goals by farming Honor in BGs once you hit L70. There is also a really easy gear path since patch 2.4 for rep-based PvP rewards.
Once you are L70, you should never go a week without getting arena points, even if you do not really love PvP. There's just some great upgrades to be had if you slowly accumulate arena points. The points vs. rating curve is very unsymmetrical and does not penalize you much for being below a 1500 rating. See this image for details:

So, yes, run a 2v2 or 3v3 with yourself, lose 10 matches (hey, you might win 1-2!), and get your points. Every 6 weeks or so you can get a new purple... That's not a completely shameful way to get some gear pieces.
Personally, I wouldn't bother BGing until you get to L70. 4-5 undergeared and underleveled people in AV is going to really drag down your team, and you'll have a better chance at winning once you're L70. Plus, my general BG strategy is to play a mix of ALL the BGs so that you can utilize the 300 honor/turn-in. WSG will likely be the hardest BG for you to win, and so I recommend running your guys through WSG in groups of 2 or 3 until you get geared up and learn how to not be a horrible liability there. You'll end up getting tokens faster that way as well, even if you didn't care about your faction as much as I do.
Even if you want to do PvE a lot, I still recommend the gear from PvP as a good kick-start at L70 because it has a lot of Stamina, which will help you during instance runs. Also, you can generally get 4-5x of an item for a given time, whereas it may take a long time to get 4-5x of the same dungeon item, particularly if you're a bit undergeared.

I couldn't agree more with Boylston's assessment of getting arena points every week. This is absolutely critical to gearing up as quickly as possible. On my PvE warlock I sat in a 1400 rated 5v5 for a few weeks and got the mainblade, which jumped me from a blue right past Kara in one fell swoop.
