Inventory Management and Low Level Crafting

Considering fiddling with LOTRO again. Any ideas on professions? Historically I basically did several professions and tried to sell the stuff I made from them (the pleasures of an mmo) but there really wasn't a lot of demand for low level gear that way. Whats the absolute easiest thing to do so I spend a minimal amount of time trying to auction things people do not want. Maybe just focus on a few buffs and potions for my spells and sell all of the minerals? Full farmer team making food and veggies?

Pretty much all raw materials for gaining crafting levels sell at reasonable rates.

Other items are the usual top level crafted items.
