I'm thinking to come back. Just box 5 team and use it for arenas and do some instances.
Which class would do good in 5v5?
I have dks at 100 and hunters.
Thinking to switch to 5 feral druids or 5 rogues. Maybe 5 paladins. I like the mix of healing tank. Since I can throw some instances.
What is your input guys?

Not sure, but i dont think you can multibox in PvP anymore since they removed /Follow in bgs atleast.

Well, first you should note that the 5s ladder has been removed. :3
Of those classes DKs and Pallies and hunters (if you wish to just run one class) would be able to clear mythic+ instances to atleast some extent. The best success currently has been found in stacking tanks. Mixed groups can as well, but anything non-tank is a lot more prone to dying to mechanics sadly.
As far a PVP... I honestly don't know what would work for 3s, as I've not tried a single one yet. Apart from seeing how far you can climb the ladder there simply is nothing to gain from it anymore. The gear I get from world quests, LFR, world bosses and the occasional mythic is already better since actual PVP gear was removed.

This change only affected random battlegrounds. Follow works (or atleast used to, not tried in legion) fine in rated BGs and Arena.

I have kinda(not at all) success with 3/2 DKs in arenas, but anything with a paladin or disc destroys me, and sadly those two are used alot right now.

True, no more 5x bracket - So i'm thinking Paladin's or Druids.

it does still work in arana,
wubsie rated BGs/wargames follow was removed from them the same time. from my data mining it looks like it uses the same mapID's

I've decided to go with 5 tank paladins, :) mainly for dungeons, i miss boxing sometimes, and my isboxer still has tons of time before expires, winter is coming, nothing to do outside anyways :)
