I am boosting a priest/pally on my mage main and i chose this duo for end game but also because they can both res/heal just wondering wot spec would be best?

Ugh, I'm not normally a grammar nazi, but that run-on sentence hurt my brain. I have no experience with Pallies... but the priest can go either way for end-game. It all depends on what your playstyle is. Do you like to heal? Do you like to do damage?

To the point of pally's, I had a level 63 paladin a while back that I left when I and my friends switched back to horde. The way I had the most fun playing her was as protection, I imagine depending on what your booster is that is still a good way to go. If you have a healer, I would recommend it.
Protection pallies aoe grind, so you would want to get yourself a shield spike, slap on ret aura, work your way to holy shield and blessing of sanctuary. Then grab yourself a slew of mobs and grind them out. This works solo, mind you, but with a healer behind you you could really push the limits on it.

If you are boosting the pally, it doesn't matter. You're leveling the paladin, you shouldn't need any help. If you DO need help, spec it holy and have it spam heals on you. If you don't need help (which is more appropriate) spec it prot so it can take a few hits if something goes wrong.
If you're using the pally to boost someone else, definitely go prot. See my video ('http://vboxing.net/blog/videos.php/2008/03/09/powerleveing-sm-cath-with-a-prot-paladin') if you haven't already.
