Hmm, am I missing something or does stopcasting not work the way (I remember) it worked in WoW?
Setting up my mixed team, I'm using http://www.curse.com/addons/rift/click-box-healer with a (isboxer) repeater region to click heal (on the cleric) from any client.
I added stopcasting to the CBH macro to allow the cleric to DPS until healing was required but it's not working as expected - the stopcasting seems to be taken as a command and you need to click twice (with a small pause inbetween) in order to stopcasting on the first click and then heal on the second.
I'm sure I had similar macros when healing the same way in WoW where the macro would would interrupt anything being cast and the heal would initiate on a single click - but it was a few years ago so maybe I'm just misremembering.
Am I missing something or do I just stop DPSing with the cleric to have her always ready to heal?

I can't speak to the stopcasting as it stands in either game, but perhaps you can add the stopcasting to ISBoxer's keydown and the heal on keyup, or buttondown/buttonup for the mouse, however ISBoxer does that. I'd have to guess ISBoxer can do that with mouse buttons as well as normal buttons?
With limited testing using just macro buttons, rather than the click box healer addon, you seem to need a slight pause between the "stopcasting" click and the "heal" click, so not sure the down/up thing would work, without holding the down for the required duration and then releasing, which is just going to be forgotten in the heat of battle when you really do need that heal :)
Thanks for the suggestion but, for now, I've just stopped the cleric DPSing, except to start wanding - this does mean that on quite a few rifts/invasions, the cleric doesn't get any rewards, as he never gets to damage a target, which seems extremely unfair for healers :(

I'm not sure how you expect it to work, but I use it in my Cleanse macro and it seems to work just fine. E.g:
/stopcasting
/cast @mouseoverui MyCleansingSpell
This will abort the current spell (if I'm currently casting a spell with a casting bar) and instead throw a cleanse on whatever character I'm hovering the mouse over in the raid ui. It's a single button click, no need to click anything else.
That's how I expect it to work - but that's not how it's working for me :(
First click executes the stopcasting, interrupting whatever she was doing, and I need a second click to fire off the heal!
It works like that either from the click box healer addon or from straight macro buttons.

If that is the case, make sure you turn on full queuing for your actions in the Settings. Then the would execute on it's own without requiring a second button press, as soon as the global cooldown is over.
That fixed it - I had it on Short queue - swapped to Full queue and it's working exactly as expected :)
