I have the following teams:
4x DK
4x Shammy
1x Pally
I have a few RAF levels which will expire in next few days and want to use them. I was thinking a team of 5x druids or maybe 5x priest (shad) or even 5x mage
I am very casual and play maybe 5-8 hours a week now as my child, work and family is taking all my time. My shammy are lv 85 but totally in crap gear as I really only play the DK and pally in BGs now. So what would be a good fun team and easy for boxing? I dread the leveling grind that will come with MOP so the new team will likely never hit the next level milestones :(

Nothing beats DK's in PvP and nothing beats Shamans in PvE. There's no solid information that this is going to change in MoP. Ret and Shadow look like they're getting buffs, but nothing I've seen indicates they will displace Frost DK's or Elemental. Any levels you grant would just be a guess at which class may play solidly after Blizzard is done playing musical chairs with game balance.
Since you don't have a lot of time to play, I'd just pick whichever class you like the sound of to dump the free levels into (no point wasting them, since they expire when your 90 day RAF ends) and invest your time into gearing your Shamans.

Ok cool thx for advice. I want to gear the shammy up. Trying to box dungeons and heroics was not working too well yet since low ilev. So I thimk I will run battlegrounds this weekend with them. Can you do well in heroic pve in pvp gear or am I better off converting honor to justice for gearing them? DK will be my main team, but shammy are better suited to seeing the dungeon content with my pally as tank
So what do you advise for gearing them?

It's been a while since I've leveled a new team, but I don't think much has changed. Buy or craft all the BoE's you can and pick up all the freebies (faction epics, etc). Queue for random BG's and and convert honor into JP (I find this faster & more fun than grinding instances). Solo queue for the new 5's and pick up the quest items and whatever drops you happen to win.
After this, you should be more than geared enough to start grinding random heroics for VP and attempting to work your way through heroics. I'd also advise you run LFR solo at least once on each of the characters you plan on boxing, so you have a solid grasp of the mechanics (see: which direction to roll your face in) of LFR. If you make a mistake it's more obvious when you're boxing and people will have a sook about it, even though 80% of people in LFR are horribad themselves.

I'd create the DK's, with one per account.
Even if you're not planning that many, down the road.
And get them out of the DK starting area, then park them.
That will put them at Outland level immediately.
If you've only got a little bit on RAF.
I'd definitely use the time to boost as much as you can.
Especially with only two 4x combos.
You can grant levels, and you'll want to use those.
For boxing, several classes are very nice to have (this is my opinion).
Including:
A) Death Knights, Druids, Paladins, Shaman.
B) Hunter, Mage, Priests, Warlock
C) Rogue, Warrior.
In addition, its nice to have several tank capable classes, spread across your accounts.
If you could have one tank on each, that is flexibility down the road.
Healers are similar.
Tanks: Paladin > Druid > Death Knight > Warrior
PvE Heals: Priest > Shaman = Druid > Paladin
PvP Heals: Priest = Paladin > Shaman > Druid
Again, my opinion and not necessarily the same as everyone else's... just what is easier to "box" with less concentration necessary.
From what I've seen, in the expansion I plan to have (because they will absolutely rock):
- 5x Rets
- 4x DK's & 1x Healer (main team now)
- 5x Druids (Feral & Boomers look to be good, am 5x Resto now and that is fun too)
- 4x Shaman & 1x Druid (shammies, and a tank option)
