Well, any eyefinity 6 graphics card will do fine, otherwise you'll need to get two(ATI/AMD cards) to three(Nvidia) cards to drive all those monitors.

If nvidia has lots of cards with three+ outputs I remain ignorant. I know there are a few, not enough to warrant significant discussion. Maybe. I dunno.

Well, I was going to a grouchy asshole and say the motherboard wasn't important, but it is. Sorry, thank you.

If we're running multiple high powered graphics card power is going to be an issue. What is your Power supply rated at?

Seeing the motherboard, depending on your case, you could run three dual slot cards, or two tri-slot card if your case is large enough. For performance NVIDIA historically has lots of muscle, but they eat lots of power and piss lots of heat. ATI is innovative, with eyefinity you can run two cards, six displays. Unsure on where crossfire stands, but we want to power lots of displays.

I would probably go with two AMD cards and use Eyefinity. If you fill that third PCIe slot (on
that motherboard) it'll only be 4x which is where you're going to take a performance hit.
Splitting the load between the cards is going to be interesting as well. Last time I tried I
could only do it using DX9 and not DX11.

Also, if you can afford an extra $100 then I would say spend $40 on a 2500K, ~$60 on an
aftermarket cooler, overclock the 2500K, and get ~1GHz free in CPU speed.

If its in the budget, a 2600K (roughly $100 more than a 2500K) can be a good increase in performance, especially as you add additional clients.
2500 will work for 5-man content, 2600 is smoother play in battlegrounds and/or raids.

I can't really comment on those AMD cards but they look like they're about as powerful as a GTX 460 which
is about 1.5 years old.

I'm running 4 screens off an ATI 6990 with aftermarket cooling http://www.arctic.ac/en/p/cooling/vga/449/accelero-twin-turbo-6990.html?c=2182 since the stock one is unbearably loud. I prefer 1 card solutions because cooling is far easier to manage, if you plan to go for 2 or more cards (in separate PCI slots) then you really should have watercooling.
