currently the way I heal with my priest... I am levelling the priest... with my decently geared rogue... I have it setup pretty well to cast spells based on targets that my rogue has... (i know i should have a druid instead but for levelling up it seems quite decent perhaps at 70 when I want to do more id prob rather hvae a druid but oh well...)

Right now I just /assist and then do whatever, heal attack etc. The thing i would love to be able to do is to find an easier way to heal different targets without having to rely on switching targets on my main...

I guess this isn't possible really unless I want to map another set of buttons for each person that I want to heal ?

You could have the priest remember who it heals. It wouldn't help if many people are taking damage, but if you need to cast several heals on the same person. I suppose you are using a standard assist focus setup?

If you use the priest mostly for healing, you can use "...[target=focustarget]..." for all offensive spells, leaving target for heals. This way you only have to target a friendly with the rogue when you want to switch targets.

first /target rogue's target if friendly cast heal on target if it exists If no target exists, cast on self (or on rogue)

/target [target=focustarget,help,nodead]
/cast [help,nodead][target=player] Überheal

This is a good macro will work with it :) I dont cast much offense at the moment though but it would be nice for dispels :)
