First let me ask, what is you opinion of the "perfect" 5-man group?
I was thinking about running:
Dwarf Prot Pally
Draenai Holy/Disc Priest
Draenai Fire/Arcane Mage
Human Affliction Lock
NE Boomkin (friend really wants to have a purpose with his boomkin)
In regards to my potential makeup are there anythings you would change (Specs, Racials)?
I know a shaman would be a better choice over the Druid, but I'd like to try to keep the druid in the group makeup.
And this group is purely PvE, I have not the slightest intent on PvPing.

Looks like a good enough set up. I just dont know the challenges of Multiboxing 3 different classes.

I'd make the mage Frost for better CC/survivability but that's just me ;p

I'd drop the lock for another mage. The group will be easier to manage and you'll have better CC which is always good.

Id go:
Druid and 4 shamans = if you wana raid druid can go boomkin and lots of healing or druid can heal and shamans tank
pala and 3 firemages and a shaman = shaman heals and if ya wana raid he can go elemental and you can bench the pala
5 shammys = why? cuz you can! XD

I had this group(well, still have) for pve, except I used a shaman instead of a druid. It worked pretty good for me, don't see why it wouldn't work well for you. Unless mobs were really tough, I'd just round them up with the pally, and aoe them down. I played a shaman for 2 years before multiboxing, so I'm more comfy with that class. I think a boomkin would serve a similar role...ranged dps, backup heals, buffs, etc. Go for it :)

And this group is purely PvE, I have not the slightest intent on PvPing. With those classes, I'd heal with the druid and dps with the Priest. The Shadow priest would be so very useful in a group of only manausers that if you bring a priest he really should be shadow. With the paladin tanking most of the time noone else is going to need healing at all (hopefully) So lifebloom rolling and other good druid healing options are simply the best possible thing you could have for healing.
