Between 5boxing a lock team and a mage team, which one would be simpler to raid dps with? just trying to decide which one to bring up first to raid with. mages are quite fun and want to do them first, but never raided with one, are they proc based or simple-ish?

The choice should be clear after watching this (http://www.dual-boxing.com/showthread.php?t=34194) video. However, I know nothing about either class at level 85.

Do you want to solo raid or box raids?
Anyway, without playing one myself, but as raid leader for my guild: have 3 mages in my roster who are playing since vanilla and have a hardcore raid track record. With hc dungeon gear and some boe's they have been doing really poor so far. Poor as in at the bottom of the dps. In frost spec they seem to do more damage. However fire seems to get way better with gear. Only seen 1 arcane mage so far and that was quite a drama (below feral tank on dps).
Lock on the otherside is among top. Both affliction & destruction seems to be pretty close with survival hunter & unholy dk's.from what I've seen so far. Not sure where demon lock stands though.

mainly wanting to do 25mans with guild, probably too little margin of error to do 10mans.

I think there's a massive difference to cover here. Since he wants to box them. Which is quite a lot of different then solo players reaching X or Y dps.
I do not know about warlock's dps at lvl 85 in Hc. But i do have a mage. Mainly playing arcane in PVE and it's extremely basic and simple. So awesome for boxing I'd say.
I pull out ~8k dps with itemlvl 341 With gear focussed on PVP. Lacking hit for example. I have no constructive experience with locks at 85. Saw some exeptional good ones and average ones in Pugs etc. Not sure how capable they're for boxing high dps atm.

Well lets take entry fight like halfus. A typical whelps + drake release on pull. 8 whelps have 4.1m hp together, drake has 4.1m hp as well, with a typical 2 tank, 3 healer 5 dps setup. If each dps does 12k on whelps, it takes you exactly 1 minute to take them out. Same goes for drake (did not include tank damage here). So you have 4 minutes left to take out halfus his 32m hp. Can assume that halfus has 30m hp left after those 2 mins, from MT damage.
With 2 drakes released/killed you'll do 100% increased damage on halfus. When releasing last dragon that you don't kill, he'll take 150% increased damage. However he'll stun raid 3x in a row with his roar, at least 2 times when he is < 50% health. So lets do the math for 3m40, which means you'll need 125k raid dps / 6 means 21k dps in that phase. Given 150% buff thats very doable. But you're boxing them, and to gear up 5 mages from hc gear, thats taking a while as well. It'll be a challenge for sure.
