I had the same thoughts as you about 2 years ago..

I went with:

elemental shaman
balance druid
mage (tried all specs, a hybrid frost build is actually decent in dps at the moment at 5k gearscore if you are 5boxing/using macros and it provides replenishment)
priest (healer)
paladin (tank)

I ended up swapping out my balance druid for a warlock because managing the eclipse proc was a pain in the butt. It is doable and there is a lot of info on how to do it on these forums, but for me, spamming one button for dps was 100 times easier.

How does the warlock do? I've used him as affliction, destruction, and demonology and had these results with the macros:

affliction: dps on trash is pretty horrible (5k gearscore) but does great on bosses.
demonology: without managing the molten core procs or even using decimate/soulfire the dps was solid and the additional spell power buff is great, adds about 420 spellpower with my current gear/buffs
destruction: good dps and adds replenishment, solid rotation with nothing to "manage" but the dps didn't seem to scale as well as affliction or demonology with gear..
the caveat... with cataclysm so close and SO many changes with the beta, we don't have a clear idea of how things will change. some classes may move to a more "proc based" playstyle (like ret paladin) which will make 5boxing more difficult.

if it were me, I wouldn't make a decision yet or I would start leveling guys knowing full well that one may get swapped out later on...

Warlock for it's versatility, summonstone, soulstone etc.

The destro rotation will probably not change a lot, where boomkin's wil.

My thoughts.
