Can a macro be written so when my slave hunter performs an assist, the pet will attack exactly the same target as the hunter and not switch to other mobs during combat if the pet itself consider them a higher threat?

The pet will never "consider them a higher threat." Once you sic the pet on a mob, it will stay on that mob until you sic the pet on another mob, you pull the pet off the mob with /petpassive or /petfollow or the mob dies. If you're having trouble with the pet switching targets, post your macros. I'd bet a dollar it's a buggy macro or something like that.

The pet will change to other mobs after the mob you send it at dies and the other mobs hit the pet (AOE, cleave, etc). You can put the pet on passive and it can be sent to kill a mob and run back to you when it is done. That is a waste of DPS (pet is not attacking during running time), but if it works for you.
You can put in targets for almost any command.
/petattack [@MainCharName-target]
If the pet is in defensive, it will attack the mob that the hunter is attacking, automagically. They changed that like in 3.1 or so. So you can just have the hunter....
/assist [@MainCharName]
and the pet will go after the same mob.

I've got 3 hunters as slaves and whatever target you sic them on first, they will stay with that till you command them to attack a different target or that first dies. Just cause your hunter switches targets, does not mean your pet will too if that previous target still draws a breath. I see this alot in BGs with my team. Best way to combat this, put the following line in your hunter's dps macro: /petattack. This will insure your pet is always attacking your hunter's target. Best to put it right after the /assist command.
edit: Forgot to add something. Unless you use the mouse broadcasting with ISBoxer, set up some macros or one big one with modifiers for the pet bar. Have one for the /petfollow command and watch it during battles. If you notice it run off to another mob, just hit that and it'll come back. Helps me in BGs too.

Currently I just use
/assist focus
on my hunters, maybe I should try adding the petattack as well then. Cause now when I tell my hunter slaves to assist and shoot at a specific target, one or two of the pets often face another mob after they have charged. And they do this even when original target still is alive, it happened several times when I attacked elite mobs in dungeons.

I have never liked assist for just that reason, it's slow. Your /petattack can occur before the assist registers. Change to
/petattack [@pettarget] [@target] [@focustarget]Pick a conditional or use more than one. Vyndree had a nice one that allowed you to send your pets against different mobs, and as each mob died that pet would go help another pet.
