Now, I have someone who has an EEC Intel based Motherboard w/ 16GB of Matching RAM. It'll be a little bit more pricey, but the computer will be used for heavy gaming and excessive Photoshop/Lightroom usage.

Going with the EEC/Server Motherboard, would it perform with what I am looking for? Or should I stick with the original AMD Build?

You should like you know nothing about "server" grade hardware. I suggest you look into it quite a bit more before throwing money at it.

The information I have found on EEC based MOtherboards/RAM is not all that easy for me to understand. And Googling "EEC vs Normal Mobo's" has yielded 5 year old searches.

Any advice on where to start looking?

My understanding is that ECC RAM is slower than non-ECC RAM, even at identical speeds, for the sake that it has an extra 'error check'. As gamers [especially multiboxers] we want the fastest RAM we can get our hands on so there will probably be some sort of performance hit with ECC. Servers and what-not use ECC RAM because downtime = bad and that extra 'error check' helps save on possible downtime. Someone please correct me if I'm wrong. :)
