Man that's sick. I've always been into super geared tanks, although I've never had one myself :(
I always go inspect and check the stats of the best geared tanks on my server. If I could have any one character geared to the absolute max it'd probably be a warrior or pally tank :)
Here's a good one from my server:
http://www.wowarmory.com/character-sheet.xml?r=Nathrezim&cn=Arrak
With the skeleton key on he'd have like 47k I believe

Had an old kingdom group the other day, first tank dropped as we zoned in so dont know what he was like.
Second tank was a Pally
With priest buff he had 22222 health (I was impressed with this)
He wasnt Def Capped
He didnt use rightous fury until we pointed it out
He could NOT hold threat
Only gear change between Prot and Ret was weapon/shield.
I was healing(Disc) and damn, I could not do reaction healing, I had to spam Flash heal just in case he took damage. This lead to everyone except me and the tank dying on the first boss (I kept everyone up for about 2/3rds of the fight, with pretty much everyone taking a turn tanking, Priest, Mage and rogue all go squish very easily)
The random rogue in the group dropped when we wiped and we got in a friend to tank and let the Pally DPS.
He got 2 upgrades of the final boss, we said grats, told him to look up what the def cap is, and went on our way. I hope he learns, seemed like a nice enough guy apart from the fail gear.

You can put a tank on 40k unbuffed by just running heroics. Raiding tanks can get easy to +45k HP.
Here is my tank as example: http://eu.wowarmory.com/character-sheet.xml?r=Anachronos&cn=Loladinus
By changing the gems it gets past 40k, but I am happy with some extra dodge and parry rather than more stamina. Fixing his belt and cloak (buying the frost emblems ones) he will be near 40k unbuffed with ease. I run only heroics and some raids from time to time, but not dedicated raider. Usually pass on loot for the other tanks to get it because their guilds would benefit more than me.
So I see absolutely nothing insane in 25 man raiding guild tank having +45k unbuffed... after all, heroics running tank can go to 40k with ease.

I've had to equip lower iLevel stuff on my tank because there is so much goddamn hit on everything that drops in ICC. My tank, a fucking tank, almost has hit the spell hit cap through gear alone. Fuck you blizzard.

My multiboxing tank is also major raid tank in my guild, 10 and 25 man.
I am currently the best geared tank on my server (5892 GS, 3200 Wow-heroes score) according to Wow-heroes.com (Sethra, linked in the signature).
When full raid buffed (and I sub in a stamina trinket for the nonstamina one) I can hit almost 58k. When I'm 5-boxing, I do 5-mans at 52k-ish.

Blizzard made picking up tanking gear very easy with 3.3, you can hit 40k with crafted+badge gear without having to step foot in a single raid. I have 3 tanks each with 40k, just so I can play around with the different plate tank classes :)
the crazy thing is my DK and warrior each hit nearly 35k in just their PVE DPS gear when raid buffed, more than tanks had when starting naxx... our guilds druid tank also is coming up on 60k buffed up, over 100k when popping druid-last-stand

Probably true, but it's going to take a lot of work and time.
My Paladin was only played in my groups (never used solo for gear) and never ran a raid. After a fair bit of heroics farming, she only sits at 34k HP unbuffed :

Hit rating is overrated for tanking...
Although there was this one time in Naxx on Four Horseman, I was assigned to pull off one of the bosses as the other tank started the pull. My ranged Faerie Fire missed, and then the backup Taunt missed, and the boss outranged me and wiped the raid. I was only 1% away from the cap, so that double-miss situation shouldn't happen often at all.... but boy was it memorable.

This is exactly why tanks should be hit capped.

You contradict yourself here with your own character Fur.
171 Hit Rating. I gave you the benefit of the doubt, I thought maybe you don't raid on your tank and its just for heroics. Checking your character feed you seems to do plenty of 10 and 25 man raiding.
Sure in an ideal world being hit capped would be lovely but its way down the priority list because 99.9% of the time you are so far ahead in threat that if you missed abilities or hell did nothing for 30 seconds your probably not going to have any pull aggro not bringing into account MD or TotT.
Personally I thought Bolystons story was pretty funny and it made me laugh because I can imagine it happening to me and how I would feel in that oh, shit! raid wiping moment.
And on-topic I love perving at other tanks and wishing some of those items would drop in the raids I attend rather than eleventy billion pieces of Paladin Healing gear that everyone groans everytime it drops.

My tank(s) are nubs.
But the one time you miss a tuant - is the time you should have been hit capped. When I was raiding naxx and doing four hoursemen, you bet your ass I was hit capped. I don't actively raid end game content with my pally anymore, so he's in need of maintenence.
But you can be a fuck and play games if you like. My point still stands.

that's my tank that I raid with. I used to have him hit capped but I've seen alot of the top 25 man DK tanks and none of them are hut capped, tho they are all expertice capped. Mine is a bit low. But I use food to get it up.
The warrior tank in my guild has 35exp rating. The problem with getting to the hit cap is you need to stack hit gems. I had 5 hit gems plus one jc 32 gem. Since stacking stam gems I've seen no decrease in dps/tps.
On the otherside my dps set. 4.8k gs I have 377 hit with not one hit gem. Kind of annoying

Never let me down so far, buffed 42k, maybe defense rating is a bit to high, and i should change some gems/enchants.
Any comments?

I would love an armory link to one of the really good druid tanks. So far I have taken a look at Nolife's druid tank which is a good one, but seeing these pally tanks its easy to see theres a higher level :) I know all the gear is mostly raiding gear but still.

Full raid buffs (fort/flask/mark/shout/imp/sanc/food) will get her to around 56-57K.
Stacking stam is decidedly not the best way to gear for raiding. And it's overkill for 5-mans. There are better trinket options for pally tanks. Agi and agi/stam are probably her best gem choices.
Enchanting/JC is not a bad combo tho, and she has 25-man hard mode gear, her avoidance is fine, so her gemming choices aren't that big a deal I spose. Still, RAWR STAM is lazy imo.

For raids being hit-capped as a tank is imo required, a missed taunt during a required tank switch can be a wipe. For sustained threat it's less of a big deal, but I think still the best threat stat until you're capped. Pallies do only need 8% tho, most moves including taunts use physical hit rating.

I'm far from a BiS bear (I raid full time cat these days) But this is what I tank with when I box. 25 man T8 is still more AGI/STA/AP than 10 man T9 so I still rock most of my T8.
(Depending on when you look at this I may be in cat gear, just yell at me and I'll login and swap back to bear gear)

Most tanks have two taunts, the probability of not getting both off is pretty low(.08x.08=.0064) and most encounters are forgiving enough for a 2 GCDs. The reason you see people not care about hit is that expertise has brought so much more to the threat table.
Also I would like to see some documentation on how sta gems are not best anymore, sure there are situational bosses/adds where you want more avoidance, but every tank I see in end game raid guilds stack pure stamina. I'm not saying they are all right, but declaring that stamina is "decidedly" not the best anymore seems heavy-handed when the issue hasn't had a clear resolution.
edit: case in point the player you are critiquing killed ICC10 Lich King, can you say that?

.
You are pretty much incorrect here. Sure having an avoidance set is a good idea but Stam is King by along shot. I can see a few boss fights where I'd swap out a stamina trinket for a armour trinket but for a Paladin Tank/Druid Tank the more health you have the better talents like Ardent Defender and the Druid ability to boost his health by 30% are. Sure Agi/Stam will give you 44 armour but you lose quite a few thousand health gemming that way and yes it will give you dodge which is then lowered drastically in ICC anyway.
ATM massive stamina and peices with bonus armour are the way to go still gemming for pure stamina and meeting meta requirments.
Any tank wearing Naxx gear or higher is overkill for 5 mans. They are designed to be done in a few ilvl 200 epics and mostly blues - thats about all I really agree with you on.
Just about every boss fight that requires a taunt switch other than Thorim is forgiving if your taunt resists, and most tanks have 2 taunts anyway. I'd much rather be expertise capped than hit capped.

Well with the Paladin Tank Nerf I went from 45554 Health unbuffed to 44100.
This was to help 'steer the tank population' so that its more fair. Because a small nerf in health is going to cause veryone to re-roll Druids.
Fuck you Blizzard. Now I need a couple more ICC 25 upgrades just to make up what you took from me.

you can get some awesome hp and gear fairly easily even if you dont raid, running weekly raids for 5 frost and the daily is slow but it mounts up.
run icc rep farm and get the schedmatics and make the 264 items, im 42k ub and i havnt got any icc stuff yet.

Taunt needs spell hit, so 17%. That's not something you should aim for. On fights where a taunt is very important use the glyph.
Anywho: Normally a tank's gear shifts when the group or raid gets better. Start with survivability, then when mobs start dying faster (and you don't) shift to threat gear.
Proper tanks use different sets of gear ranging from high effective health to flat out threat. Every tank can make some silly super high hp gear set. That doesnt make it a good set and it means it's probably not such a great tank.

Unfortunately, I haven't had much luck with drops in ICC yet. Just the helm so far from 25. The tank gear just literally hasn't been dropping in weeks of clearing.
I wouldn't necessarily call my tank insanely geared due to some weaker toc 25 pieces, but i sit around 44K unbuffed hp but pre nerf i would clear 60K raid buffed, but now i get to upper 50s.
