I jsut started multi boxing with a 3 shaman team. It's been really nice, but I was wondering what you guys thought about a 3 paladin team? Would that be viable? and how hard would it be if anyone if experienced with that? 3 prot pallies would be pretty insane i think.

There are 2 issues with that. First, melee breaks autofollow which is used extensively. So hitting moving targets can be a pain, mainly pvp less pve. Second, prot only does damage by getting hit, from both reflective damage and reckonning so having 3 prot is a waste. The only damage your other 2 would be doing would autoattack/seal/judgement/consecration the last two being mana intensive.
If the melee aspect didn't bother you, you could still spec one prot, one ret and one holy and have it work fairly well IMO. Prot for reflective, ret for straight dps and holy for healing/SoR dps(stacking spellpower).

I dunno about breaking follow being a pain. I have a main macro "/assist <maintoon>, /follow <maintoon>" and I tap it about 2-3 times before each target to make sure they all have the same target and are on my caboose.
Now, I put that macro in keyslot 1, and lightning in keyslot 2....so each time my tank picks a target:
1,1,2 and boom, I'm attacking. It's not too bad to constantly ensure each is in follow.

Three active auras, three active and extended blessings, three instant judgements ... it was quite appealing! :)
For PVE, just meleeing then smashing the follow Key is not so painly.
But never though really of PVP matters and this damn right foe who will jump everywhere and turn around you.
Would a combo between hammer of justice (6s * 3 of stun) and Seal/Judgment of Justice which will impair the movement might do the trick?

In theory this could be very fun. Just picture 5 holy paladins in pvp healing eachother. You would be allmost unkillable. However I fairly certain that fear and cc would turn you inside out. You could get the pvp trinket and use bubble to counter fears, but I really dont think that would cut it for this kind of play since you have to be durable.
it *might* work with some sort of "roundrobin" cleansing (each toon has another toon to cleanse) But you still have to hope that one of your char's resist the fear, and it would not work against warrior fears.
