The Orcks of War made it to 80! 5x shaman in terribad gear. I am halfway through Grizzly Hills with mostly quest gear and I managed to pick up 2x Deadly and the cheap blue pvp trinket with honor. No enchants or gems yet.
Ideally I would like to get into heroics as soon as possible but from what I've read I will need a tank and initially a healer as well. I've got another team at 70, pally, priest, mage, warlock, hunter. So I am thinking of leveling this team to 80 as well and the pally can be swapped in as a tank for my shaman. But that means another 5 classes to learn, macro, spec, etc and to grind to 80. And this team will be as horribly geared as the shaman unless I do some instances which I think I am going to have to do as this team is more of a liability in AV than anything else. On the upside, this team has a lot of tradeskills at 375 where the shaman has none except enchanting high enough to DE everything.
The alternative is to make a 5x DK team or a pally and 4x DK team that I level to 80. Much easier to do as I would only need to research, macro, etc 1 or 2 classes.
My other option is to spend some time on the shaman to find better pre-heroic gear, get the other 3 deadly pieces, get 5K for my 2nd team's cold weather flying and get some enchants on their good gear.
So much to do.

Hitting level cap can be very daunting and quite depressing. I know both me and Ooga hit level cap at roughly the same time and I think we both went through a few different stages of just simple not playing or only playing our mains and not multiboxing.
Your so focused on pushing to 80 that when you arrive you suddenly realize the game has only just begun and you have a huge list of things to do.
I would suggest perhaps creating a google docs spreadsheet and writing down a list of things you need to get done and what you need to do to achieve them. For heroics you will want a tank but you dont necc need a seperate healer. I use a paladdin and 4x shamans and its no problems other than that I can be quite horrid at instances. :D
Get crafted saronite pvp gear or go do some ice crown and storm peaks quests to get some decent blues. Look into faces of doom offhands and titansteel guardians. :)
Create a 5's team, you don't even have to accept the queue, 344 pts = deadly gloves or shoulders in the first week. If you have a friend with an 1800 rated team, your personal rating will jump to 1000 without playing any games and you can get furious.

You have 5 shaman's.
If you want to do heroics, you will need a tank.
But 4x Elemental and 1x Tank can play quite well.
Or you can make it easier and respec/dual spec one to Resto.
As you gear up, you can stay resto or run them all Elemental.
It's a preference really, either works.
Normal instances can be done with all shammy teams.
But in general you need to be at a gear point where there aren't many ups from what you're doing.
You can get a fairly decent set of pvp gear from honor alone.
And that way, you can gear all five at once.
PvP gear is not optimal for PvE, but its decent.
The reverse is true as well.
I'd also run dailies with the team in Icecrown every day.
Or as often as possible.
I make 1100g a day, running 5 toons through 15 dailies each, in about an hour.
That assumes I don't loot corpses along the way, doing so adds 50-100g and an extra half hour.
The Titansteel caster maces go for about 1000-1200g on my server.
They'll last you a long time, and have ~450 spell power on them.
A week or so of dailies, and each shammy has a very decent main hand.
Between pvp/pve gearing and the AH you can gear up steadily.

Got my 344 arena points today. I also bought some reputation items I already had rep for and didn't realize, hello new shield and weapon. I already feel a little more survivable in AV although my mobility and slow switching of mains are hurting me atm.
My arena games were funny, I went 3-7 where the 3 wins were the other team not turning up. I was up against other multi-boxers 3 times lol.
I think I will play the shaman for a while still. I'll probably finish up the quests in all the zones as this is my first time playing WotLK and some of the quests look fun. Maybe do normal instances when I am feeling adventurous and eventually I'll muster the energy to level my tank.
I would level that second team. Professions are always good to have (or bad to lose). More characters at 80 is good, it opens more options.
I'm in another boat : I levelled 5 shamans 'till 60 and then swapped one for a paladin. Now I would like to try 5 shamans at max level, so I planned to level another group to bring the fifth shaman from 60 to 80.
So many things to do, so little time ... ;)

I did some power leveling, to get a single toon (well two, but the goal was one) from 60th to 70th fast.
Take the level 60 toon to Borean Tundra.
Group them with another toon, who is physically there with them.
If they do any damage at all (to tag the mob)...
And only pet damage kills their tagged mob.
They get full experience for the kill.
And of course Magma Totems are considered pets.
So take your level 60 Shaman.
Group them with another toon near 60th level.
Run around doing some kind of AoE to aggro a bunch of mobs.
Once all the mobs are tagged, have the shammies drop their Magma's.
I had one key for Magma x3.
And another key (round-robin) for Stoneclaw Totem, to grab threat and stun the rhino's.
Initially its slow, because at 60th, you need several casts to land a spell on a 67-69th level rhino.
Later is slows too, because you are close to the mobs level.
But the middle levels just fly by... 64th or 65th through 68th or so.
I did go through full rested in 40 minutes.. so a level and a half of killing.
One of shammies is resto dual spec'd.
So I put Earth Shield on the mage who was AoE tagging the rhino's.
It was 10 hrs for 60th to 70th, with full rested for two toons.
Not a bad pace.
And I made a fair bit on the AH with the rhino meat and vendor junk.
Sold them in 4 (or was it 5) meat sized stacks, for the daily cooking quest.
