Moorabi bites the dust, major, epic moment for me! :)
I got my tank to 541 defense, 23k armor buffed, 25k health buffed, got my healing macros sorted out, and my team posted these numbers:
Mage: 1731dps
Druid: 1630dps (while spamming heals, too)
Lock: 1488dps (need to look at that)
Pally: 927dps (who cares, she lived)
Priest: a whopping 127 dps, she healed the entire fight.
It was close at first, then I got the rythm of the fight, healed through 2 impales (or whatever the AOE is), and did a 1-2 beat between heals and dps.
Done!
I'll probably get my butt kicked the rest of the way, but I got a H boss down. One emblem, 74 more to go! :)
Edited to add: Oh, and no deaths.
Edited again to add: Had the Gorlock boss down to 10%, doing fine, Comcast crapped out. I effing hate Comcast with a burning passion. Had to quit out, I have stuff to do anyway, I'll pick it back up tonight.

Why did you try moorabi first?
Because he's easier than the snake boss. :)
Honestly, he's a pure tank and spank, so I wanted to get some solid DPS numbers and see how my pally did with 541 defense, even if I wiped, and several people here have said Gundrak is or is one of the easiest Heroics to do.
You can also go in the back door (southern entrance) and you only have 2 pulls to get to him, so I picked him - the Snake boss has several snake packs to get through, and I was getting slammed hard by them in normal. From him you can go down a tunnel and have some really easy pulls to get to the Gorlock bonus boss.

Grats! Its been a while since i first started, and I thought it was an impossible cycle, you need gear to down heroic bosses, but you need to down the bosses for gear... It is a very slow start, but it starts to pick up steam and eventually, you will be downing bosses without much effort.
For your lock, check out the macro forum, and find the destro lock macro in Fur's "compendium" my warlock is geared now, but when i first hit 80, i went destro and was already pulling 3k dps in dungeon leveling blues.
Its only gonna get better for everyone else too, my paladin does like 2k dps on some boss fights, more if theres any adds. My mage is arcane and is pulling near 4k dps on the tank n spank boss fights, deep arcane. Hell my tank is up to 40k hp now and my priest only puts a renew on now and then and sometimes does an aoe heal, but is usually just spamming smite for 1.5k dps :)

Try the first boss in UP. That is the easiest boss I ever fought in heroics.
Moorabi was a pain in the ass for me until I got geared a little better and learned how to interrupt his transformation. hammer of justice! :)
Oh, and Congratulations!!!!!

totally forgot these instances im currently dabbing into heroics now and let me give you some of my first experiences
HC Hol - after finally working out how to avoid the 30% damage buff on the boss the serker stance was still too much for my druid even with about 35% dodge and 24k hp
normal Hol - putting this in becuase i cant see a real easy boxer way arround this.... The orbs just tear my team apart if i try to kite them it is defently going to end in fail when the boss remerges together and starts nukeing. So any clue how to do this at all would be great.
HC nexus - first boss i thought would be pretty easy.... well the first thing that gives you a badge is easy.. but the real first boss that BE mage is a nightmare, i can handle the fact that you get very little dps on her its the 2 times that she splits up i waste so much mana and time healing and trying to reposition everyone with polymorphs makeing that even harder that i could live past the 2nd split.
been trying heroics for a couple days since i hit 80 my shaman and druid are very undergeared. liturally all in crafted pvp blues. but its pretty depressing how fail these 'easy' bosses are. i really want a mage in the group to trivialise these encounters with dampen magic.
will give gundrak a go tonight

I just downed Moorabi last week too for my first heroic boss kill. I had a hard time with the snake boss, need to learn aggro management.

I don't know how much dampen magic will do towards trivializing these fights, the biggest issues I'm facing is keeping the tank alive, and group healing. H bosses hit HARD, and I've learned how critical being defense capped is. I'm at 541 now, and my tank was getting chewed up in UP(H) by the mobs in Raven's Watch (trash on the way to the first boss). I had to put the druid on healing full time to get through it all, and even then, at the last pull, they got past my tank and one-shotted 3 of my slaves.
Crafted PvP gear isn't going to cut it in Heroics, I don't think. My team is in mostly epics, I think the only blues I have left are shoulders on some, and wands. I need some serious trinket upgrades, as well as relics and idols.
I had to finally admit that the tactics I'd learned on the way up, don't mean squat now. I was'nt able to level in dungeons, so the fights are new to me, but it's a completely different world in Heroics. I LIKE it! :) Questing content is trivial for me now, dailies are boring now, but they paid/are paying for the best crafted gear I could get, and epic gems, and all of the titanium/titansteel gear I need.
From what I can figure, crafted and rep gear will get you into Heroics, but not overgear them, which is an edge we MBers kind of require a lot of the time. The only way to overgear a Heroic is Naxx/badge gear. So I basically have a few weeks of grinding whatever bosses I can get down, to start getting gear, then, it will get easier. That's fine, it's my new goal, and my time will be spent watching videos and trying things out.
I also need to start practicing jousting as a group, because it's TOC once I have badge gear - which will position me for IC when 3.3 comes.
Sounds good on paper, lets see how far I get! :)

I got my face eaten off by the mobs on the way to her - the pulls, even with a sheep, are insane for healing. One on one, they're fine, but 3 at a time, I'm pounding the heal keys. I gave up (I was exhausted from a long day) at 2am last night, when the last pack got past my pally and one shotted the Lock, Mage and Priest, and took me and the druid down about 30 seconds later. Ugh. That was a horrific wipe, it happened so fast.
Can you Shackle Undead them? I sheeped one, which held, but the three who got past just stomped me, and oneshotted my 3 before I could pick aggro up again.

I have the Icebane pieces, but I went back to the tempered set for the defense.
She's taking too much damage, I can't keep up on the heals a lot of the time - I took Moorabi down again, but wiped on Eck and the friggin mana wraiths or whatever they are later on, bad pull.
I know my trinkets suck, and I need more strength, but I need that defense cap too.

This a game of inches take a look at protection_paladin_field_manual great source of information. Your gear needs a few tweeks.
Gear wise your should be looking for anything that helps build defense don't worry about Crit or Hit (as long are your at the hit cap) Parry, Dodge, Block and Stamina are your tagets to build.
You need to Glyph Divine Plea:
Quote from protection_paladin_field_manual
"Divine Plea: Since the Guarded by the Light talent allows you to keep Divine Plea active full-time as long as you're hitting something, this glyph effectively amounts to a flat 3% reduction to all incoming damage. This is probably the only glyph universally considered a "must-have" for tanking."
Also take a look at the section on starter gear this will give you some pointers on gear you can get easily.
Farm Normal ToC the gear in there is very nice, next find a few Heriocs boss you can take out for the Conquest badges you don't need the whole instance just farm a few bosses till you can gear up a little more.
Move up to Heroic ToC even if you can't clear it just farm the first two bosses, Skip the second boss if you get the women she is tough.
Like I said I was where you are just a few months ago most of the Heroics are pretty easy now after I geared up a bit http://www.wowarmory.com/character-sheet.xml?r=Galakrond&n=Targ

I wasn't thinking about the trash. On my pallies I have 4 repentance where I can stun them for up to a minute. There is one type of mob you can stun but he wakes up and charges you. The worst ones are those that cast lightning.

Yeah starting out is thought, but got to be patient and just work your butt off. My tank is decked out, not to Ulduar standards but got a bunch of Naxx gear I got like 31.1k Unbuffed, end up with 36.5k buffed. The priest has 19K mana 1800 SP still wearing 6 blues but can heal everything. Shaman got some ok gear I normally only see about 2500 dps out of them, cant really see much else since everything dies too fast.

I looked over your pally. Here are some thoughts.
-Glyphs, Get glyph of divine plea, make sure DP is always up when you're tanking. This helps a ton with mana and damage reduction.
-Talents, mostly look ok, I would move around some points, but you rpropably dont have a lot of mana issues just yet since youre taking a lot of damage, when you reach around 29k hp, things will get a lot easier. Once youre at that point I would suggest something along my paladins talents: http://www.wowarmory.com/character-talents.xml?r=Stormreaver&n=Phean&group=1
Divine sacrifice is amazing when it comes to aoe reduction, there is some changes coming to it next patch that for lower geared tanks should make it even better.
Divine Guardian: This talent no longer increases the amount of damage transferred to the paladin from Divine Sacrifice. Instead it causes all raid and party members to take 10/20% reduced damage while Divine Sacrifice is active.
Divine Sacrifice: Redesigned. The effect of Divine Sacrifice is now party-only and the maximum damage which can be transferred is now limited to 40% of the paladin’s health multiplied by the number of party members. In addition, the damage transferred to the paladin is now reduced by 50% before being applied to the paladin. Finally, the bug which allowed Divine Sacrifice to sometimes persist despite reaching its maximum damage has been fixed. Divine Sacrifice will now cancel as soon as its maximum damage value is exceeded in all cases.
-Gear: This part here is just limited by how much gold you have(and please get rid of those bracers :/)
here's a list of what you should have from crafted/rep gear, and will make heroics much much much easier(skipping pieces that you already have).
Helm-Should be using 32 stam meta, stamina is your most desirable stat, and you only need 535 def for heroics
Cloak- honored wyrmest gives you this: Cloak of Peaceful Resolutions
Chest- You can try Breastplate of the White Knight, otherwise there is one from rep(forget which one),
Bracers - crafted bracers are considered 2nd best in slot, they're decently cheap to make, get em. Saronite Swordbreakers
Gloves - enchant them with 18 stam, this is a kit from leatherworking.I dont think there is too many boe tank gloves, if any.
Belt - make this- orbs are so cheap right now, just do it Indestructible Plate Girdle
Boots- Really good boots, also from cheap orbs, there is no upgrade to this from any badges or heroics(same goes for the belt above) Spiked Deathdealers
Rings- Signet of the Earthshaker or Signet of the Accord , keep your titanium tank ring.
Trinkets - pre 3.2 greatness card was best threat trinket.
I also dont see you using extra sockets from BS profession.
All this will make your tank a bit over geared for heroics, and take fun out of them :P But that's the goal isn't it?

Excellent stuff, guys, many thanks. I'll be studying this very closely this week. :)
This is what I get for never playing a tank, huh?
I'm pretty sure I can farm Moorabi, and I'm looking for another I can farm. I'm going to go back to Nexus/HK and give those a shot. I need to figure how to get past the voids in the trash in DTK, too. Hate those.
Money is no problem, I can farm dailies for a few days - I've been doing the dailies pattern posted elsewhere, it's easy money.
Blacksmithing sockets. *smacks forehead*.
ToC - you really think I'm geared for that? I guess I better figure out the jousting!

The voids in DTK are the hardest part of the instance, the trick is MOVE. You can't stand in the puddle.
It is the little guy that casts it, and it will at random target your group, then they have to move. Put up
Shadow Protection Aura it should help enough to get out of the puddle. Silence, interrupt what ever you can
to prevent him from casting. If one of the groups has two in it fear / sheep one of them untill the first is dead.
The second Mob in DTK you should skip tell you get geared up, you can walk past her along the far (left hand side as you enter the room) wall and not agro.
As for normal ToC you will not know till you try. The first boss is easy once you get them unmounted. The second if you get Eadric the Pure is a snap, if you don't get Eadric exit and reset it.
