I was wondering what you guys do and what I should do when you have a 5+ boxing team in terms of professions.
I don't think you need more than 1 char with herbalism as an example.
So do you get all the gathering professions and then what others?
edit: or is there maybe one important profession for you that everyone has to have, e.g. engineering.
Something that only lets the char with that profession use?

One thing that you should have whatever you do, is Enchanting. There is always stuff to DE.
Myself i have Enchanting/JC on my main, and recently did 1-450 Alchemy on all 4 slaves. Did this mainly because of transmutes, because its a huge moneymaker. 4xtransmutes (epic gems) each 20 hour, and with transmute mastery usually atleast one slave procs, and gets an extra gem or two. Thats 5-6 epic gems each day, and if i cut them right and put them up raiding days, it's easy 700-800g a day on my server.
During the RAF period I'm not bothering with profs, since they become such a timesink. I want to get the most of my 90 days, as I'm hoping to have 5 of each class by the time it ends. Once they're all levelled or gifted to 60, the gathering profs should be very easy-mode.

Professions are worth it in my opinion. Gold is so easy to get now that I dont have to worry about selling everything that I have anymore so I can use everything I farm up for my professions.
Just on my Pally + 4x Shaman team I have:
Mining(Maxed) / Blacksmithing(448)
Tailoring(440) / Enchanting(Maxed)
Skinning(Maxed) / Leatherworking(447)
Herbalism(375) / Inscription(365)
Alchemy(115) / Jewelcrafting(15)
I finally decided to level the rest of my trade skills and should be maxed Herbalism maybe by tonight while I try and level inscription. After inscription is leveled i'll get Alchemy then Jewelcrafting up asap.
I love being self sufficient. :P
PS: Even if you don't intend on leveling your trade skills immediately just get them anyways. Even if you cannot use the patterns you will be able to bank the patterns for later once you can use them. One of my shamans already has over 40 JC patterns just sitting in the bank ready to be learned.

I look at it this way - I hate dropping any professions I had to make stuff to level, so my tailor, blacksmith, JC, Inscriber, and leatherworker will keep their jobs, even if I don't use them that much. Like leather - my rogue and druid have the best she can make, so I've just been stockpiling the stuff - and when I have a shaman team, they will have the best I can make the minute they can equip it.
Gathering professions, I'll drop, no problem. I've filled an emptied my guild bank so many times, I've lost count. Just set your guys to gather while leveling, and sock it away, that's what bank tabs are for.
Put some thought into your team at first, and then give each a trade, and a gather. Then, when they're 80, switch em, or just enjoy the proffessions and their perks. Make life easy on yourself and make your lead herb/mining, I wish I had. Make at least one a tailor, the extra cloth is nice.
I've NEVER regretted getting 5 bank tabs. Worth every gold. I would work on bank tabs first. I have alts with bags full of recipes and patterns, I have two stuffed to the gills with low level herbs and ore, and I still have to empty my tabs out on a regular basis, its so easy to get stuff (with the exception of titanium ore)
I don't think anyone picks herbs on my server anymore, I spend half my time picking them, stacks and stacks of them, I make a good side income on frozen lotus and inks.

With all my alts, I have 4 miners @ 450 (selling titansteel CDs) 2 Alchemists (xmuting epic gems)
I have huge potential to make a lot of gold from professions, but I don't. My main makes a nice amount off JC. But really all my professions go to supporting my alts. I run dailies to support buying BoE gear / crafting upgrades / general day to day expenses.
I make 1500+ gold a day in dailies, about 2 hours of work (watching TV / harassing guildies)
I just spent 11k last week gearing my freshly 80 rogue. I'm about to buy another epic flyer, then start to save up for 5x wyrmsrest drakes for everyone once my DK finishes that rep grind.

Well as far as during leveling, skinning on slaves ...
If your doing gathering quests, which many people don't but whatever, your already got mouse move + interact with target going on and looting mobs and letting the item go to whoever until the items are all picked up. Double tapping the move + interact with target will make 'all the slaves skin and one of the loot' (that means they all skill up by the way).
If you alternatively round robin(assist + mouse move + interact with target) you can easily loot and skin after group kills in places like violet hold without much of a thought one on each character. Its pretty damn quick once you get used to it.\
Note that on quest skins (if a pristine hide drops off mobs, but skinners can get an additional one if they skin it) if a skinner that has all the hides and the quest is complete is the looter of the skin. The quest item is lost, you need to have the one that still needs skins to skin it.

professions are FUN ! having them all is awesome, imo, a big benefit of boxing (not everybody has enough 80s to get all professions maxed out)

I love professions, But I do mine a bit different then has been mentioned here.
For example, all my shamans have Blacksmithing/JC on them for the boost.
All but one Paladin, has engineering. I love having 5 palies with bombs on top of everything else.
Of course my first account has one of each of the professions also.

Only one of the shammies in my current main team has any professions, and those are Enchanting and Jewel Crafting :)
Outside of that team, I have a herbalist and a miner so that I can gather my own materials if I want to, but I so rarely even bother that it's hardly worth it.
The only "must have" for a multiboxing team is somebody capable of disenchanting. Beyond that it really just depends on what you like to spend your time doing.
My team, for example, spends all its life in heroics or battlegrounds, so I'd never use the gathering professions in any case.

Does anyone have Engineering on more than one toon. I want to know if you have multiple toons click on the mote extractor at once will they all get motes? This would be pretty sick if you could get *5 the loot out of each cloud. Plus motorcycles are pretty cool.

Im torn here.
I dont really like professions and dont feel like they offer too much (beyond perks) that you need to have them for specifically.
Part of me wants to just do BS / JC on all my guys (except for my main, who already has enchanting so prob Ench / BS for him). That gives them great prof perks with a LOT of versatility.
Im just afraid blizz will nerf it and then ill have to relevel something else haha.

I am in the process right now of making everyone on my team into a Transmute master for the epic gems transmutes every 20hrs and a JC for the JC daily. The way I see it, 10 mins of time should get me at least 4 epic gems and 4 Dragon's Eye per day. Assuming xmute mastery didnt ever proc. Sounds pretty good to me. The downside will be the no disenchanting for me :( . But I'll have enough gold I"ll be able to pay an enchanter to just tag along lol. If I felt so inclined.
