I've been curious how you would quest with a 4 shaman team. With the dumb quests like picking up 10 tails from a scorpid. Would I need to obtain 10 tails for each shaman?

Yes.

Collection quests become exponentially more annoying for each additional toon.
Translation:
It's fine on one toon
It's a bit annoying on two toons
It's REALLY DAMNED annoying on three toons
It's LUDICROUSLY RIDICULOUSLY BAD on four toons
It's going to cause you a mental breakdown on five toons

Personally when I play I like to grind and listen to some music and kind of chill out. Collection quests are good for times like those. Most people avoid them like the plague though.
Also keep in mind that not all collection quests are created equal. Some have 100% drop rates, some are abysmally low. Dont just dismiss them out of hand =)

Yep, I did A LOT of collection quests in northrend on my 3 shaman, skipped only a couple. I figured it was the same as grinding, but with a 20k exp payout at the end.

It's not as bad now with "interact with target". Just keep interacting all 5 toons with target until questhelper shows everyone is done. The only good thing about looting collection quest with 5 toons is extremely fast kills. Of course there's no fixing low drop rates.

unfortunately, yes.
although, collection quests are good for the boxer who is ambidextrous...u get my point  ( <-- ambidextrous smiley?)
i remember doing this quest Daggercap Divin' ('http://www.wowhead.com/?quest=11443') and i'd have one toon collecting crates on the left side of the sunken boat and the other toon on the right side of the boat.
wish i had 2 pairs of eyes tho, and maybe another brain so i could keep track of both...
