I'm dual-boxing happily now, and doing a team of prot pally and holy priest. (they're only L5 so far so technically not prot or holy yet lol).

From my research, I see my paladin gets Righteous Fury at L16 and Consecrate at L20...so is L20 the 'sweet spot', where I can start doing big-a$$ pulls and being able to hold aggro on the pally while the priest heals me? What are others' experiences with this duo, in terms of when you can really start motoring along with bigger pulls?

Obviously at L5 my pally's skillset is so low it's difficult to hold aggro on multiples, but I'm hoping that 20 it'll be really sweet.

Other sweet spots seem to be when I get the talent 'spiritual attunement' at L40 to help the pally's mana regen and then when I get Guarded by the Light 2/2 at L51 when I'll have infinite divine plea and thus infinite mana, amiright?

20 is pretty much the sweet spot to start tanking with the pally, but don't forget consecrate will use a large chunk of your mana at that lvl so start out slow puling groups of 2,3,4 etc so you can see what you can handle without going oom and getting rolled :)

You get Blessing of Santuary ('http://www.wowhead.com/?spell=20911') at level 30, that should help with mana everytime you dodge, block or parry an attack. Reduces 3% damage also when up. My paladin talent knowledge is a bit fuzzy atm. If Guarded by the Light is the talent that refreshes your Divine Plea, then yeah, you'll never have to drink again :D
