I've returned to the game after a break of several months and decided I'd like to take my 60 warlock/druid through to 80. Up until now I've played the warlock affliction and druid feral separately. I'd like to box them together while I quest up. I also play on a PVP server so keep in mind there's a fair amount of ganking in BC and WOTLK. That being the case, I can't decide what spec would work best in balancing killing speed and survivability. Affliction vs. Demon on the warlock and Balance vs. Resto on the Druid. I've decided against feral since it's much harder to box. The warlock will be my main with the druid on /follow on a second computer.
Thanks in advance!
lock spec aff druid spec resto. Just fully dot one mob then move to the next, you'll get about 5+ mobs attacking you at a time which the druid can heal you through while you get lots of exp and finish quests quickly.

Do you think it's worth going full up the Affliction tree for Haunt or should I stop earlier and start working on Demo for improved survivability and eventually SL? Also, which pet would be best to have out with a healer along for the ride? I've leveled up with VW but with heals would I be better off with Felhunter or Succy?

I would actually use the imp for mana battery and go all the way to get Haunt. The reasoning is this: your main concern while leveling is not survivability. If you're careful, you shouldn't get more than 3 adds at a time, or even 2 if you really know how to pull. Your main limiting factor is your mana supply, which can be replenished through dark pact and life tap. If you do this, spec balance for druid just for added dps.
Alternatively, you can keep using VW, get soul link, and use him as your tank. For mana supply, life tap all you want, and druid keeps healing. Don't bother to heal VW, he can take beatings really well. Just heal the lock to keep mana supply up. That way, you're an unstoppable killing machine. For this approach, you can spec resto or balance doesn't matter. Even if you spec balance, you can still cast HOT once every 5 mobs to replenish warlock's mana and imo it should be sufficient.

Affliction with some points in demo for stamina. Haunt does damage as well as gives you health. so dont think haunt is useless now that you have a pocket healer.
witha healer you might be able to lifetap without end, so darkpact might not be necessary. try it with and without darkpact and see if this works for you.
if you want to level fast, i suggest learning to drain tank with your warlock. its by far the fastest way to 70 with a warlock. be prepared to be constantly micromanaging dots on multiple mobs. i would also use the succubus or the felhound.
good luck.
