I have been experimenting different classes to multibox with. It pretty much seems using any melee class is just a serious waste of time. It seems like Shaman is the main pick. I guess what I am looking for is to see who plays what class?

I guess it just depends on what you want to do with your group.
Here is my experience. I moved from 2 to 5 accounts because of RAF possibilities. I have been playing 5 characters for a month now.
I have 5 shamans at 60. The levelling was fun and easy. It is possible to do instances quite easily, nice change from quests.
I will level-gift them a Paladin and do serious post 60 instancing when my RAF period is over.
Shamans are of course nice because of their mail/shield, the self-rez, the healing ... And the fact that playing one class only simplifies things greatly. A very good way to learn how to multibox.
Now I am busy with 5 mages. Great fun, very efficient levelling on quests only. No instances for these, it is just not possible without no tank or healer.
The idea with this group was to just take 2 of the five and team them with a Paladin/Priest/Mage I already have : holy trinity group for WotLK instancing. But now that I see how much fun the five are, I might keep them together and level-gift myself two DPS for my holy-trinity group.
The mages are level 37 now. Going up fast.
I also have a group of five hunter around level 30. Really fun and really easy mode for questing. I plan to incorporate my level 70 hunter in the group later on, and level-gift them a druid healer. I might try PVP on that group, but I am also sure it will do good in instances (probably not heroics, though).

Some people seem to have great success with melee classes but starting out I would use casters first. The most important thing for me is a ressurection ability. If youre doing PvE and especially instances the benefit of 4-5 self resses especially when youre learning a new boss is great. Every boss, even those your fought before on single boxing btw is a new boss when youre multiboxing.
If you really dont want shamans then at least one toon that can ressurect is very useful - GY running a single guy or 2 is a pain in the ass.

Shamen are indeed a great class to start with,
but now that WotLK is coming and ToW stops stacking they start loosing some of their imbaness.
Mail+shields+healing+(self)rezzing are still imba tho
It's mostly a preference issue tbh,
just take what classes you want and make them work.
