I've got a group of 5 leveling right now and based on the speed I'm leveling, Looks like I'll be lvl 60 by the time WOTLK comes out. The way my RAF is setup, I think I'm going to be able to pull of 4 more lvl 60's at that time. When WOTLK comes out I remember reading that 60-70 XP is going to be increased which should make that grind faster, and then I'll probably Multibox on through to 80 but only time will tell.
Current group is: Paladin, Priest, Druid, Warlock, Hunter
Grants will likely be: Warrior, Shaman, maybe a Rogue, and the rest undecided.
My longerm goals are to play casual endgame in WOTLK, hopefully in a dedicated smaller group running 5 mans, heroics, and working into 10 man versions of the dungeons. I'm considering switching all toons to my main account upon dinging lvl 80. I believe there is space for 10 toons per server meaning I'd have space, and though the $75 a month isn't a big deal, $15 a month is better. I'm wondering if any of you have left behind your ability to multibox and what kind of experience that has been for you. Keeping them on seperate accounts seems like it would have it's benefits. Easier time LFG for instances and such being the primary reason. Anyways, just fishing for input. Wondered what any of you other guys have planned.

$75 a month
I pay every 6 months so it comes out to $65 a month for me, but then you are stuck with it for 6 months and $390 (i just hate that bill when it is time to pay cause it is all up front).
The other thing that you have to look into is the $25 per toon transfer, but that is just a shot deal. So you are looking at $200 to transfer over your toon to 1 account.
Congratulations on starting with a group made of five different classes. That's brave, it must be tough.
I started 5-boxing with RAF, before that I was only 2 or 3-boxing.
Now that I tasted 5-boxing, there is no way I would go back to even two, let alone one character at the time. It is just too good to be able to play instances alone (I mean, at the level they are meant to be played, not high level farming). Also, being very casual, playing instances by myself is the only way for me to see more than the low level instances. Yep, I'm a casual multi-boxer, never was in a raid ! :)
My plans and groups are made in such a way that I can re-use my old characters, the ones I levelled solo or two-boxing. Because I like them, and also because they have every profession covered. I have a hunter, priest and rogue at level 70. I also had a level 60 mage, a level 54 druid, and a level 45 warrior/paladin duet. All these have been (or will be) gifted levels to 60.
My first group, the inevitable five shamans is up to 60. I will gift them a paladin tank (Draenei, so they continue looking all the same).
My second group is a five hunters group. They reached 30 now. At 60 (or perhaps at 54 if I miss the heal), my druid will enter the group. Also, a level 60 hunter will be replaced with my level 70 hunter, which should help a lot the 60-70 grinding (I plan to run as many instances as possible). Until then, it is very fun to play.
My third groupe is made of 5 mages. I plan Arcane Explosion fun until 60, then I will swap my already existing level 60 mage (375 herbalism), and replace two other mages with a paladin and a priest. This will be my only "holy trinity" group. I plan to do all the 5-man content I can with this group.
I will probably level another group if I have RAF time left, but I don't know what yet. I will also wait for 60-70 XP requirement to be reduced to start that. I will probably not be ready with a level 70 group when WotLK is released, but that's no biggy, this way I will just avoid the croud in the starting zones.
Longer term plans include 10 man instances with a friend of mine who is rolling some groups on my server. That's quite a bit of fun ahead ! :)

Reguarding multiclass. Not so hard. The biggest pain is training abilities cause you gotta run to 5 trainers instead of 1, buy different regents, stock up different things (arrows, water, pet food) etc. Thats the pain. Actually running with them is tons of fun.
I don't think I'd ever transfer everything to one account, but then again, I pretty much have alts of everything on my main account, and just a few RAF levels will bring them all to 60 and up. I'm kindof an altaholic who's been playing on Azuremyst since I started.
I'll probably not buy WotLK for all my accounts right away, just my main and my secondary, so I can dual box healers or a little dps with my usual solo-played toons to level them to 80. Frankly, I'll probably still have plenty to do leveling my teams from 60-70, so the extra 3 accounts won't get the xpac till probably after Christmas. I might even suspend those accounts for a few months till I get my mains to 80 and settled.
Personal advice, you've already spent so much starting 5 accounts, you'll spend a lot on the xpacs, you'll spend even more transfering. 65 or 75 a month really isn't that much compared to all that you'll spend transfering, and the costs for all the boxes. Personal opinion, choose which toons you like playing the most, transfer them to the same account if you want, but leave at least one 70 or 80 on every account, so if the mood strikes, you can swipe some cards, and start up the 'ol 5 box again whenever you feel like it. so $15-30 for a few months, $75 for a month or two, then back to $15 or whatever if you get money crunched or bored with it.
