PvE - 0/51/10 - Up to level 70 Defensive tanking build
The Wrath of the Lich King and patch 3.0 changed many of the paladin's taking mechanics. Generating threat is now much less centered around spell power and is focused, instead, on strength like a warrior. In fact only Holy Sheild still gets a decent amount of threat generation (50%) from spell power.
New builds are built around the Hammer of the Righteous talent. Properly geared paladin tanks (stacking Strength instead of Spell Power and using a 1H weapon with a high top-end damage) do a ton of damage, and subsequently generate a ton of threat.
The above listed build is one of many variations for level 70 tanks. Below is one example of a level 80 paladin tank build.
PvE - 0/59/12 - Level 80 Sample Tank Build
Strong threat build with a ton of mitigation. Much of the current WotLK gear stacks loads of defense but skips out on dodge, block and parry stats. Having the right build allows paladin tank to cater the amount and type of mitigation they desire for their situation.
PvE - 0/49/12 - Offensive AoE farming/tanking with Reckoning
This build utilizes Reckoning, a talent that gets worse as your pure avoidance gets better. However, wearing a higher spelldamage, lower mitigation set with a shield like the Petrified Lichen Shield to maximize reflective damage makes this prot paladin one of the best aoe grinders and instance powerlevelers. Put a shield spike on your shield, buff up with Blessing of Sanctuary and Retribution aura and let mobs kill themselves as they whack at you. Keep in mind, you may need a spare shield in case your main one happens to break.

- Intellect - In 3.0 the benefits for intellect for paladins were greatly changed. Intellect may be shaping up to be the best stat to stack in WotLK. Review this information, stolen from Elitist Jerks, for further proof.

- Strength - With the advent of 3.x major changes to how paladins generate and keep threat were made. Spell Power (formally spell damage) now plays a much smaller roll in threat generation. Paladins now utilize high-damage weapons and stack strength to hold aggro.
Tips and Suggestions
Grind out a Merciless Gladiator's Slicer as quickly as you can. It's easy to get and is a great tank weapon post 3.x.
